60 seconds with National Chef of the Year, Paul Foster

In 2015, Paul Foster was runner-up in his first National Chef of the Year competition. Over the last year he’s successfully crowdfunded for his own restaurant, found a venue and put plans in place to open in just a few months’ time as well as making his second NCOTY final.

With just days until he’s back on the competition stage we wanted to find out what winning NCOTY would mean to him this year.

How did you feel when you saw the mystery basket list?

Very happy, there are a few ingredients I had hoped for.

What are you most looking forward to about the final?

Sending the dessert so I know I have done all I can and then I can have a beer.

How will you be preparing for the final over the next few weeks?

Lots of practice and preparation, I still have a few minor tweaks to make.

Why did you decide to enter NCOTY?

Because I want to go one better than I did last year. Owning the title of National Chef of the Year would make me very proud.

What do you think the biggest challenge will be on the day?

Impressing the incredible line up of judges.
