It is a huge honour to win NCOTY and amazing to think my name is now added to that list of wonderful past winners. To be recognised by the fantastic line up of judges was also a massive boost for me personally. I’m incredibly proud to have been recognised by such an esteemed judging panel. I gained more from the NCOTY than I could have believed possible at the beginning of my journey. I will take my experience back to the kitchen at Colette's and use it to continue to grow as a Chef. Winning National Chef of the Year was a great personal triumph for me. 2002 was a great year as I won a Michelin star for Gordon Ramsay at Claridge's too and it was exactly 10 years since my then boss, Gordon Ramsay, had won the same competition. Chef of the Year gave me a name in my own right, I am very proud to stand alongside the judges to help find the next talent to come from this competition."

My memories of the competition and the various stages can seem quite distant, as sometimes I have to pinch myself to remember that I actually won, but what I can say with the utmost confidence is that it was a fantastic experience.  From pulling together my entry and practicing the recipes I was submitting, through to the cook-offs and the final, the bond between the competitors was great – albeit it very competitive!  I’ve met some great contacts through the competition both on a personal and business level, and since winning have been working closely with Electrolux Professional – one of the main sponsors.  My work with them has allowed me to network in circles I would never have envisaged before becoming National Chef of the Year – it’s amazing what doors are suddenly opened for you once your profile is raised."
